Eggo Diablo

A spicy kick to an ordinary egg dish with loads of Jalapeño peppers, Harbanero peppers, hot pepper flakes with crispy hot sausage and spices!

Ingredients

  • 2 hot sausage links
  • 1/4 tsp hot pepper flakes
  • 1 egg
  • 1/2 cup extra sharp white cheddar cheese
  • 1 tsp olive oil
  • 2 Jalapeño peppers
  • 2 Harbanero peppers
  • 2 banana peppers
  • 1 shallot, sliced
  • 1 tbsp butter, salted
  • pinch garlic salt
  • pinch black pepper

Instructions

  • Slice sausage and cook in a cast iron skillet with hot pepper flakes on both sides until middle is done and outer edges are crispy. Remove from skillet
  • Cut up peppers and onions and sauté in same cast iron skillet with garlic salt and pepper until softened and slightly charred. Remove from skillet
  • Add butter to skillet and cook egg on both sides until outer edges are crispy and middle is jiggly
  • Layer on a dish your sausage, cheese, peppers, and egg

Notes

This recipe makes enough for 1 person.  Split the peppers and onions and cook another egg to make enough for 2.
Want to make this recipe even hotter, add hot sauce to the entire dish or add to peppers and onions while cooking.
Want to blacken the egg, add more pepper while cooking.
