Apple Butter Cookies

Baking these Apple Butter Cookies brought all the falls feels!  Browned butter, apple butter, nutmeg, cinnamon, all-spice, maple syrup!  What better way to enjoy a rainy day than to bake these cookies…gooey with large chunks of chocolate and so soft like a donut.

Ingredients

  • 2 sticks butter I used Land O'Lakes, salted
  • 1 cup brown sugar I used light brown sugar
  • 2 tbsp maple syrup
  • 2 large eggs I used Vital Farms Eggs
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 cups old fashioned oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp all-spice
  • 2 cups chocolate chunks

Cinnamon Sugar

  • 1/2 cup granulated sugar
  • 1 tbsp cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • Line baking sheet with parchment paper.
  • Add butter to a pan over medium heat. Cook until the butter begins to brown or get a light golden color. The butter will start to foam. When it does, turn off heat and let sit for a few minutes. Then transfer to a heat safe bowl.
  • Add to the butter, the brown sugar, maple syrup, apple butter eggs, and vanilla mixing until smooth.
  • Add the flour, oats, cinnamon, nutmeg, baking soda, and a pinch of salt (if you prefer). Mix in the chocolate chunks until well blended.
  • Roll dough out into small to medium sized balls and place about 2 inches apart on pan. Slightly flatten dough with a spoon. Bake for 8-9 minutes.
  • While cookies are baking, combine your sugar and cinnamon and top cookie as soon as they come out of the oven.
