Preheat oven to 350 degrees.
Line baking sheet with parchment paper.
Add butter to a pan over medium heat. Cook until the butter begins to brown or get a light golden color. The butter will start to foam. When it does, turn off heat and let sit for a few minutes. Then transfer to a heat safe bowl.
Add to the butter, the brown sugar, maple syrup, apple butter eggs, and vanilla mixing until smooth.
Add the flour, oats, cinnamon, nutmeg, baking soda, and a pinch of salt (if you prefer). Mix in the chocolate chunks until well blended.
Roll dough out into small to medium sized balls and place about 2 inches apart on pan. Slightly flatten dough with a spoon. Bake for 8-9 minutes.
While cookies are baking, combine your sugar and cinnamon and top cookie as soon as they come out of the oven.
