Black Spaghetti with Squid Ink

Ingredients

  • 1 pound black pasta
  • 1/2 cup capers
  • 1 cup diced tomatoes
  • 3 tbsp olive oil
  • 3 1/4 cups water
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1 tbsp fresh minced garlic
  • dash red hot pepper flakes

Instructions

  • Using a hand held blender, blend capers, olive oil, lemon juice, together
  • Boil pasta in 3 1/4 cups water until soft or al dente if you like it that way
  • Mix in blended caper mixture
  • Add fresh minced garlic, diced tomatoes, red hot pepper flakes
  • When pasta is almost done, add 1/4 cup of water and toss noodles
  • Plate and add fresh grated parmesan cheese

Notes

Have leftovers?  You can also add pepperoni, marinated mozzarella cheese balls, and bake in the oven until melted as a pasta bake the next day.
I kept my ingredients light but if you prefer, double up on the ingredients for more taste.
Per the other recipes I included in my post, adding seafood and cream sauce can take this dish to another level.  I can see large gulf shrimp, lobster, and a rich cream sauce with these noodles.  I used spaghetti but black pasta comes in all shapes.  
I used the whole box of pasta but if you are cooking for one or two people, it can be split in half and cooked accordingly.
