Baked Brie With Cranberry In A Puff Pastry

Ingredients

Cranberry Sauce

  • 2 cups cranberries
  • 1/4 cup real maple syrup
  • 1/2 cup orange juice, pulp free
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch sea salt

Brie

  • 1 8 oz wheel of brie cheese
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Topping

  • 1 cup pecans
  • 1/2 tsp cinnamon
  • 1/2 tsp sugar
  • 1 tbsp butter, salted
  • 1/4 cup honey

Instructions

Cranberry Sauce

  • Over low to medium heat, cook cranberries, orange juice, maple syrup, vanilla, cinnamon, sea salt until cranberries are bursting. Keep stirring so they do not stick. Turn off heat and prepare the brie.

Brie

  • Thaw 1 sheet of puff pastry
  • Cut top off brie and lay in the middle of the puff pastry sheet top up
  • Layer brie with cranberry sauce
  • Fold puff pastry over brie
  • Beat 1 egg and baste top of pastry
  • Bake at 425 degrees for 20-25 minutes

Notes

I chose to use whole pecans but you can also chop them into small pieces.  You can also use as much or as little as you want
When the brie was baked, I topped it with my pecan mixture and then poured more honey over the top and let it drizzle down the sides
If you want your cranberry sauce to taste a little sweeter, add more sugar or wait until it is baked and add sugar to the top
Wanting to serve it with bread, try toasting slices of French bread
Decorate with orange slices, sugared cranberries (clean the cranberries and while still wet, roll in sugar) for topping
