Smashed Fingerling Potatoes

Ingredients

  • 1 pound fingerling potatoes
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp fresh parsley, chopped
  • 2 tbsps olive oil
  • 1 tsp Montreal steak seasoning
  • 1 tbsp garlic powder
  • 2 tbsps salted butter
  • 1 tsp Himalyan salt

Instructions

  • Wash potatoes and boil for 5 minutes
  • Microwave potatoes 4 minutes
  • Lay on a sheet of aluminum foil and smash potatoes with the bottom of a glass or smasher
  • Season with olive oil, herbs, Montreal seasoning, salt, garlic butter (leave some for basting later)
  • Cook on grill on both sides until crispy or almost crispy depending on how you like your potatoes
  • Remove from heat and baste with garlic butter
  • Serve as a side with steak and veggie
