Bourbon Glazed Bacon Wrapped Shrimp

Equipment

Ingredients

  • 4 tbsp salted butter, melted I used Land O' Lakes
  • 3 tbsp bourbon any brand will do
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic salt
  • 1/2 tsp black pepper
  • 24 shrimp, peeled and deveined
  • 1 pound smoked bacon, cut in half
  • 1 tbsp honey
  • 1/2 tsp garlic powder

Instructions

  • Preheat the oven to 400 degrees
  • If you are using frozen shrimp, de-thaw shrimp and pat dry. You don't want any moisture left on your shrimp
  • Cut your pound of bacon in half. Wrap each shrimp with a piece of bacon and lay face down on baking sheet
  • In a small bowl, mix bourbon, honey, butter, seasonings together
  • Dip each shrimp in your glaze and place back on baking sheet. Spoon any remaining glaze on to the shrimp
  • Cover in aluminum foil and bake for approximately 20 minutes depending on your oven

Notes

I have made this recipe twice.  The first time I did not have any brown sugar so I used regular sugar and it worked out fine.  I just reduce the amount from 2 tablespoons to 1 tablespoon.
Also, you can avoid a step by just wrapping the shrimp with bacon, dipping it into the glaze and then placing on the baking sheet.  I did it my way because I wanted to count how many shrimp I needed with the amount of bacon strips I had.  
If you don't like a smokey flavor, buying regular bacon instead of smoked will help.  Also using regular paprika instead of smoked will cut out the smokiness as well.
