Preheat oven to 350 degrees
Mix oats, egg, water, and 1/2 tsp vanilla together. Let sit
Mix Pumpkin Puree and 1/2 tsp vanilla together
Wipe mini cupcake pan with coconut oil
Press oat mixture into mini cups half way up the side and fill with pumpkin mixture
Bake for 30 minutes
Sprinkle with cinnamon. Let cool and top with yogurt
