Line baking sheet with parchment paper
Divide 1 qt ice cream into 2 sections
Roll sections into two ice cream balls
Set in freezer for approximately 30 minutes
On medium heat, melt butter and add in cornflakes to coat
Combine sugar, brown sugar, and cinnamon and add to cornflakes making sure flakes are coated, golden brown, and crispy
Remove cornflakes from heat and place on a paper towel to remove any extra butter
Let cool
