Blueberry Almond Banana Pancake Treats

I couldn’t wait to show you this recipe (below)!  First I have to brag about how yummy these treats are.  I got tail wags and doggie kisses for this one!  I will admit that I’m an amateur photographer but working on my skills every day and these pictures look delicious!  I really enjoy making homemade treats for the dogs and sharing them with everyone makes me happy.  So much that I’m dedicating Friday’s to doggie treats and calling it “Friday Treats”!  I know that not every post appeals to everyone but if you enjoy giving your pets healthy snacks, tune in on Friday’s for fresh recipes; lab tested doggie approved!
 
I love how the blueberries turned a deep purple/blue when they hit the hot skillet.  The coconut oil gave them a glossy look.  After I finished making the pancakes, I threw a handful in the pan and rolled them around.  The heat brought out the sweetness in the berries.  Blueberries are so good for dogs packed full of vitamin C and antioxidants.  You can give them fresh as a treat, add them to a recipe, or coat them in yogurt and freeze for later.  
 

Pancake Treats Lab Tested Doggie Approved!

Jake and Maggie waiting and enjoying their homemade treats.  Look at those faces!!  I have to admit, I took a few bites to see if I liked them.  I’ve made pancakes for Thomas before which consisted of banana, egg, and cinnamon so I figured why not try these.  One bite for me and one bite for the dogs :-).

Blueberry Almond Banana Pancake Treats

Ingredients:

2 small bananas, organic
1 large egg, organic
2 heaping tablespoons super-fine almond flour (I used Bob’s Red Mill)
Blueberries
Coconut Oil, virgin, unrefined, for greasing your skillet

Instructions:

In a mixing bowl, mash the bananas with a fork
Add the egg and almond flour and mix with blender
On low heat, add a little coconut oil to your pan
Using a teaspoon utensil, scoop the batter into the pan
Add the berries to the batter in the pan
The batter will be runny so watch for burning
Flip over when you see the bottom browning and cook for another minute or two
Let cool and serve

Note:
This recipe makes 12 pancakes which are about 2 x 2 inches in shape
To garnish with more berries, add a handful of berries to the pan coating them with the remaining coconut oil and top pancakes
Store in an airtight container for up to 3 days
