Bobbi Jo’s Baked Beans
I have been looking over my recipe book and came across my baked beans recipe that I made when I had everyone over for Memorial Day last year. I whipped up a little spread of hamburgers, hotdogs, marinated chicken, bratwurst, baked potatoes, baked beans, and Jalapeños poppers! My sister brought the salad with her famous Italian dressing (gotta get that recipe!). Everyone was on a diet at my house so I didn’t have anything sweet but boy did I miss my chocolate cake with butter cream icing that I always make :-(. Sooooo….I put out strawberries, blackberries, blueberries, and grapes with a side of yogurt and honey!
I wanted to share my baked beans recipe which is super fast, super delicious and I don’t even like beans
Cut up bacon into small chunks (I used 6 slices) along with half of a sweet onion diced into small pieces. Cook until brown.
Add a pinch of salt and a pinch of pepper.
Add a half cup of brown sugar and stir.
Simmer until you get the thickness and consistency of your liking. Serve as a side or over a baked potato with butter.
