Chocolate Caramel Covered Apples
How to make chocolate caramel covered apples:
Prepare apples:
Wash and dry 5 Honeycrisp apples (we bought both large and small/medium sized apples). You can use any apple you like but I personally think Honeycrisp are the best!
Place apples on parchment or wax paper
Push stick down through the middle of apple leaving enough stick to be able to hold on to the apple
How to melt Caramel:
Unwrap 11 oz bag of caramels
Add caramel squares and 2 tablespoons of water to pan
Melt in a pan on low to medium heat (start melting on low, turn up to low/medium until caramel is almost melted and then turn back down to low)
Keep stirring and make sure the caramel does not stick to the pan or burn
Take off heat
Swirl apple into the caramel and spoon caramel around the apple covering the whole apple. Make sure you don’t get any caramel or chocolate on the stick
Sit on parchment paper for 5 to 10 minutes
Caramel will smooth out as it cools
Note: Use only Kraft Caramels. I decided to throw in a handful of regular caramels (see the rectangle shaped caramels) and they made the caramel to soft. After covering the apple first with caramel, we realized it was not setting. We had to refrigerate them for 5 minutes to get the caramel to set and not run off the apple.
You will see some puddling of caramel and chocolate on the bottom of the apple which is normal. Some people cut it off but we like it that way.
How to melt chocolate and cover apple:
Use Wilton Chocolates. We used milk chocolate and white chocolate. We used chunks of Snickers, caramels, M&M’s, chopped pecans, double stuffed Oreos, and colored sugar crystals to top the apples
We bought a 36 oz bag of milk chocolate but used approximately 12 oz to melt and cover the large Honeycrisp apples
When caramel is smooth, start dipping your apple into the chocolate
Melt chocolate in microwave on 30 second intervals stirring in between until melted. Be careful not to burn chocolate. If you do, you won’t be able to use it and will have to throw it away
We used approximately 1 1/2 cup of white chocolate to cover the small/medium size apple and for drizzling over the toppings
Note:
When covering the apples with chocolate, coat the bottom of the apple with chocolate before sitting on parchment paper
Make sure apple is covered on bottom with both caramel and chocolate using the back of the spoon to even out
Use only square caramels or caramel sheets. Using Werther’s caramels for example will only make the caramel run down the apple and will be too soft
Some pieces of the toppings will fall off. If that happens, dip them into the melted chocolate and press the piece onto the apple
Use candy bags and decorative ribbon to wrap up for a festive look

What to do with leftover toppings and chocolate?
Form a pile of toppings on parchment paper and spoon chocolate over top. Mix with a spoon and top with sea salt. Let sit to cool.
