Lemon Butter Garlic Sauce
But beware or be excited…not sure which you will be…the two most powerful ingredients are the lemon and garlic. It seemed as if these two ingredients were fighting each other at first and not complimenting each other well, so I added butter, water, and parmesan cheese to give the sauce texture and balance. With some trial and error, I finally got something we both could enjoy. This recipe is so fast and easy to make and I hope you enjoy it! It is one of those recipes that takes no time at all, can feed an entire family, or a simple dinner for two with leftovers :-). This is also a recipe that can be used as a marinade. Marinate chicken strips or chicken breasts overnight and bake in the oven with a side of potato :-).
How to make a Lemon Butter Garlic Sauce:
You can use a pasta you want for this recipe but I chose angel pasta size No. 1. While the water was boiling (don’t forget to add some olive oil to your water so the noodles won’t stick), I added 2 sticks of butter and lemon juice from 2 large fresh lemons into a cast iron skillet. When the butter was melted and the juice was blended well into the butter, I spooned out 2 heaping tablespoons of garlic from a jar (you can cut up fresh garlic if you like). I added 1/2 cup of water and let boil on high heat for approximately 5 minutes. Then I reduced the heat to low/medium and added 1 cup of grated parmesan cheese and let simmer.
How to make a Lemon Butter Garlic Sauce:
In a separate cast iron skillet, I added sliced cherry tomatoes, sliced shallot, garlic salt, and pepper and sautéed in olive oil. By then the noodles were done. Using a spaghetti spoon, I poured the noodles from the boiling water directly into the sauce but you can always drain your noodles and then pour the sauce over them. I topped with more cheese and the cherry tomato mixture.
This recipe can be changed up so many ways from using chicken, shrimp, or adding broccoli or asparagus or all of the above. Top with fresh parsley for added flavor! Ingredients
Sauce:
- 2 sticks butter, salted I used Land O'Lakes
- 2 lemons (squeeze the juice of 2 lemons)
- 1/2 cup water
- 1 cup grated parmesan cheese
- 2 tbsp minced fresh garlic or from a jar
Sautéed Tomatoes
- 1 pack cherry tomatoes, sliced
- 1/2 shallot, sliced
- 1 tbsp olive oil
- pinch of garlic salt and pepper
Instructions
Sauce
- Melt butter and add lemon juice. Let boil for 5 minutes
- Add garlic and water and boil on low to medium heat.
- Add cheese, stir, and let simmer while noodles and boiling.
Sautéed Tomatoes
- Slice tomatoes and shallot and sauté on medium heat in olive oil.
- Add garlic salt and pepper and cook until onions are soft and tomatoes look cooked.
Noodles
- Use 1 box of angel hair pasta or whatever pasta you prefer. Boil to your liking in a tablespoon of olive oil to avoid noodles from sticking.
- Transfer noodles to the cast iron skillet where the sauce is and toss.
- Add tomatoes or the other ingredients you have chose and top with cheese.
