One Meatball Recipe Cooked Two Different Ways
Are you looking for something rich and savory and easy to make? You have come to the right place. I have several meatball recipes but use only one tried and true for my homemade wedding soup. I have been making these recipes for years and always save some of the meat to either make hamburgers or tacos but wanted to try something different this time. I made a huge pot of soup last week and saved a 1/2 pound of ground meat for the recipes I wanted to try for Thomas to taste test. I made these meatballs the same way I would when making the meatballs for my wedding soup…super simple, super delish, super moist!
Here are my Baked Meatballs In Vodka Sauce and Meatballs and Mushrooms with fresh parsley! I made 8 medium to large meatballs for each recipe. Remember…you can always freeze them or later if you don’t need that many! Enjoy and let me know if you tried them!

Baked Meatballs With Vodka Sauce
Ingredients:
1/2 pound of ground chuck (80% lean 20% fat)
1/2 cup grated parmesan cheese
1/2 cup Italian bread crumbs
1 egg
1/8 teaspoon pepper
1/8 teaspoon garlic salt
3/4 cup vodka pasta sauce – I used Classico in a jar
fresh grated parmesan cheese
Instructions:
Mix meat, cheese, bread crumbs, egg, pepper, garlic salt together and form into medium sized meatballs
Add meatballs and sauce to any baking dish and cover with aluminum foil
Bake at 350 degrees for 50 minutes
Take aluminum foil off and broil for 2-4 minutes
Add fresh grated parmesan cheese
Note: These meatballs were so good on a plate of linguini and we had some left over for the next day to make meatballs sandwiches! I mixed in a can of tomato paste to make the sauce a bit thicker and added more Italian seasonings. It was something I whipped up quick for our lunch. And of course…don’t forget more cheese :-).

Meatballs And Mushrooms With Fresh Parsley
Ingredients:
1/2 pound of ground chuck (80% lean 20% fat)
1/2 cup grated parmesan cheese
1/2 cup Italian bread crumbs
1 egg
1/8 teaspoon pepper
1/8 teaspoon garlic salt
parsley, fresh and chopped
portobello mushrooms (sliced)
garlic (chopped)
1 tablespoon olive oil
1 tablespoon butter (salted)
Instructions:
Combine meat, cheese, bread crumbs, egg, pepper, garlic salt together and form into medium sized meatballs
Cook meatballs half way through in olive oil and butter
Add in mushrooms, garlic, and parsley
Cook until done
Note: This recipe can be an appetizer, side dish, or add into a plate of buttered pasta! And don’t forget more cheese!! Or if you don’t like parsley, add spinach:-)
