Sugary, Salty, Crunchy Sugar Cookies

Before I put this post out, I first want to apologize to my new subscribers.  Being new to using Mailchimp, I did not realize a second folder for new submissions was created.  I was putting blog posts out and you were not receiving them.  I’m glad I realized this because I’m celebrating Valentine’s Day the entire week and will be posting recipes, dog treat recipes, my red suede boots, lots of red, and of course, Jake and Maggie along with pet related topics.  With each post this week, I will include links to previous posts incase you are interested in what you have missed since subscribing.  Again, I apologize and should you have any questions or blog suggestions, please don’t hesitate to contact me!  I am always open to hearing your thoughts 🙂

Today’s post is about a craving for something sweet but salty with some crunch.  We got a big snow on Friday and I absolutely loved it.  Thomas was working from home and I didn’t have any plans so we got to enjoy the day and evening together.  Even though he was in his office most of the day, I didn’t have to worry about him being out on the roads traveling in bad weather.  The snow was coming down like white crystals falling from the sky laying like a white blanket over the house.  Jake had come down with an ear infection so we were staying home with him (more on that this week).  I wanted to get pictures of the dogs outside in the snow, but he wanted to come back in immediately and wasn’t up for pictures.

I had a huge craving for something sweet and salty at the same time but did not want to go out to dinner or to the grocery store.  I’m sure you’ve had one of those days and your cabinets feel like mother Hubbards.  I wasn’t going to give up.  I pulled some ingredients together and came up with this cookie recipe.  I found a heart shaped cookie cutter and what better time to use it than now with Valentine’s Day almost here.

Try my new sugary, salty, crunchy sugar cookie.  Try them for Valentine’s Day and let me know what you think!  Warning:  loaded with sweet and salty flavors!!  As the cookies cooled, they hardened which provided the crunch!

He spent the whole weekend sleeping because he didn’t feel good.  I can tell by his eyes in this picture.

On the other hand, Maggie was super excited to take her picture :-).

But she made sure to check on her brother all weekend long and stayed close by incase he needed her 🙂

Sugary, Salty, Crunchy Sugar Cookie

Ingredients:

Cookie Batter:

1 egg
1/2 stick butter
1 cup Butter Crisco
1 tablespoon vanilla
1 cup sour cream
1 teaspoon baking powder
3 1/2 cups flour
2 cups sugar
2 cups confectioners sugar
1 teaspoon course sea salt

Chocolate Topping:

2 cups dark chocolate morsels
1/2 cup International Delight Sweet Cream Creamer
Cool Whip

Blackberry Topping:

1 cup blackberry jam
1 teaspoon lemon juice
1 teaspoon confectioners sugar
Cool Whip

Instructions:

For cookie batter:  combine wet ingredients in one bowl and dry ingredients in another.  Slowly add dry ingredients to wet mixture and mix well.  Cook at 350 degrees for 9 – 12 minutes depending on your oven or until golden brown.  Move to your favorite dish, sprinkle more sugar over the top of the cookie letting the granules fall where they want.

For chocolate topping:  combine chocolate and creamer together and heat on stove over a low heat until creamy.

For blackberry topping:  combine blackberry jam, lemon juice, and sugar and stir until mixed well.

When cookies are cool, spoon your toppings onto the cookie and add Cool Whip for color and texture.  Layer the ingredients as you like.
