Happy Wednesday everyone!  These Peaches and Cream Baked Oatmeal Cups are made with incredibly sweet Legendary Georgia Peaches!  If you haven’t heard of the Famous Miss Peaches (@famousmisspeaches), the Pitbull who was rescued by Dave Portnoy of Barstool Sports (@bartstoolsports), you are missing out!  This sweet face came from a horrific situation and was taken from the outhouse to the penthouse capturing America’s heart.  Dave partnered with a family from Georgia because that is where Miss Peaches is from to create this box of 13 hand picked peaches shipped right to your door.

I first found this recipe from “How Sweet Eats” blog but tweaked it a bit to my liking and using a secret ingredient.  If you know me, I almost never follow a recipe and make my own changes as I go along.  I even took a video which I’ll share with you on my YouTube channel.  I’ve been working on that at a snails pace but I’m getting there.

This recipe is packed full of fresh peaches (with the skin on), cinnamon, vanilla, applesauce (sugar free), honey, and my secret ingredient…International Delight English Toffee Creamer.  The original recipe called for cream and milk but I doubled using the Toffee creamer.  I added the oats, salt, and baking powder together and then threw in the wet ingredients along with two free range organic eggs from Vital Farms.  I honestly will not buy another brand.  They are expensive but so good.  When I made this recipe, it came out a bit runny so I increased the amount of dry ingredients then made it to dry.  So I added some applesauce and vanilla and made it perfect.  The recipe also called for 2-3 peaches and I used 5!

These Peaches and Cream Baked Oatmeal Cups can be served with fresh cut peaches, other fruits, drizzle of honey, chocolate chips, cranberries, or my icing that I made with 2 cups of powdered sugar, 1 cup of International Delights English Toffee Creamer, and 2 tablespoons of vanilla.  Just mix until the icing is on the runny side and all the sugar clumps are gone.  In these photos, I have both a drizzle of honey and spoon fulls of icing on them.  If you now me, you know I like sweets!

Peaches and Cream Baked Oatmeal Cups

Equipment

  • 2 Bowls
  • 1 whisk
  • Measuring cups

Ingredients

  • 2 1/2 cups old fashioned rolled oats
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp kosher salt
  • 2 large eggs (I used Vital Farms)
  • 3/4 cup creamer (replaced milk)
  • 1/2 cup creamer (replaced cream)
  • 1/2 cup applesauce (I used sugar free)
  • 1 tbsp applesauce
  • 1 tbsp honey
  • 1 tbsp vanilla
  • 5 sliced peaches (with skin on them)

Instructions

  • Preheat oven to 350 degrees
  • Spray muffin tins (I used large tins) with Coconut oil or any nonstick spray
  • In a small bowl, whisk together eggs, creamer, applesauce, vanilla and honey
  • In a small bowl add oats, baking powder, cinnamon, and salt
  • Add dry ingredients to wet ingredients (slowly) and whisk together until combined well
  • Slice peaches and add to oatmeal mixture
  • Using a large spoon, pour into tins about halfway up
  • Bake at 350 for 25 minutes
  • Top with walnuts, pecans, honey, or icing
