Caramelized Peaches With Caramel Sauce and Cream Cheese Topping

This recipe is a re-post but I couldn’t leave it out of my Desserts Roundup.  I keep seeing these amazing peach dessert recipes and couldn’t pass up sharing this again.  I was recently asked if I knew of any good desserts using peaches and this one came to mind.  So here it is!  I hope you enjoy this poset.  Let know what you think and if you make it.  Your rating will help Two Adorable Labs rank higher in Google’s search results.  
 
Happy Wednesday everyone!  I am in love with this Caramelized Peach recipe and couldn’t wait to share it with you.   I found several recipes via Pinterest and Allrecipes, but the Grilled Peaches with Caramel Sauce from Grandbaby Cakes stuck out in my mind.  I stuck with the ingredients for the grilled peaches (changing them slightly) but decided to create the caramel sauce and cream cheese topping myself.  I’m calling this recipe “Caramelized Peaches” but honestly, I decided at the last minute to sauté’ them in a cast iron skillet.  I just wasn’t sure if “Sautéed Peaches” as the title sounded very good????   This dish is absolutely scrumptious with loads of ripe peaches, brown sugar, butter, and a secret ingredient you wouldn’t expect!

I washed and sliced 6 peaches in half and took out the pits leaving the skin on.  In a small bowl, I combined the brown sugar, cinnamon, and nutmeg.  As the butter was melting in my cast iron skillet, I coated each peach and placed them face down in my skillet first, then flipping them so the entire peach was coated and caramelized in the butter.  This process took about 10 minutes leaving a soft peach with a cinnamon glaze coating.  The combination of butter and spices adds an extra layer of ooey gooey goodness to the already sweet peaches.  Make sure you watch carefully as you do not want to burn or over cook and make the peaches mushy.

While the peaches were cooking, I mixed the cream cheese, vanilla, confectioner sugar, and my secret ingredient International Delight Caramel Macchiato Creamer together in a small bowl.  These ingredients together created a rich, creamy, topping for the peaches but if your taste buds do not like that consistency, use less creamer and more cream cheese.

While the peaches were keeping warm in my skillet and the cream cheese topping was sitting in the refrigerator, I started on the caramel sauce.  I have to be honest here.  Making caramel sauce has always intimidated me but after giving it a shot, it is incredibly easy to make.  Just make sure you keep stirring it to make sure it does not burn at the bottom of the pan.  I combined the butter and brown sugar together first and then added my International Delight Caramel Macchiato Creamer, vanilla, and a pinch of salt over medium heat until it started to bubble.  That’s when I knew it was done.  Leaving it on a bit more can make it thicker but I was afraid I would burn it so I didn’t take the chance.  I like salty caramel but not burnt caramel taste!

Then it was time to put all three together and boy was it decadent!  I should call this recipe sweetness overload but that’s why I chose to throw in a pinch of salt.  The caramel sauce was actually a combo of sweet and salty which you guys know I love!  And per your liking, you can adjust how much salt you like.  I chose to use a pinch but you can always add more.

These peaches can be grilled, baked, or sautéed.  If you choose to grill, spray your grates with cooking spray first.  If you choose to sauté, cook over medium heat and if you choose to bake, bake on a sheet pan at 325 degrees until your peaches are soft.  Top with your favorite topping which could be more spices, more butter, or add another fruit such as mashed strawberries.  Cut fresh strawberries into quarters, mash with a fork or masher, add some granulated sugar and you have just created another topping.  Or if you want something crunchy, try breaking up corn flakes or pretzel sticks soaked in butter to add to the top!

Ingredients

Grilled Peaches

  • 4 tbsp salted butter
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 6 peaches, ripe
  • 2 tbsp brown sugar

Caramel Sauce

  • 1 stick salted butter
  • 1 cup brown sugar packed
  • 1/2 cup International Delight Caramel Macchiato
  • 1 tbsp vanilla extract
  • pinch of salt

Cream Cheese Topping

  • 1 8 oz cream cheese
  • 1/2 cup confectioner sugar
  • 1/2 cup International Delight Caramel Macchiato
  • 1 tsp vanilla extract

Instructions

Grilled Peaches

  • Combine cinnamon, nutmeg, and brown sugar together in a small bowl
  • Wash, cut, slice, and de-pit the peaches
  • Dip peaches in the spice mixture and lay in pan with butter
  • Cook until peaches are covered and caramelized but not mushy

Caramel Sauce

  • Combine butter and brown sugar in pan and stir until all melted together
  • Add brown sugar, cream, vanilla, and salt and stir until bubbling but not burnt over medium heat

Cream Cheese Topping

  • Combine cream cheese, confectioner sugar, creamer, and vanilla together with mixer until creamy
  • Layer your peaches with sauce and cream cheese and serve warm
