Beef Taco Bake

Every once in a while, I get a craving for Mexican.  I love going and getting the white cheese, nachos, and a shrimp burrito with extra pica de Gallo!  Yummmmmm!  Thomas isn’t a big fan of going out for Mexican but that man LOVES cheese.  I was trying to come up with a snack for lunch last week for the two of us and I said…you are going to love what I’m going to make you!  I opened up the refrigerator and sitting in front of me was a large bag of shredded extra sharp cheese and the idea of this taco bake was born!
 
There are so many recipes on the web for taco bakes but I threw this together with ingredients I had in the kitchen.  The secret and difference to my taco bake is the homemade salsa concoction that I came up with on the fly :-). This is a combination of cheesiness, crunchiness, saltiness, and some tang!  It is incredibly easy to make and does not take long to cook.  In a short time, you have a side dish to a main meal or something small for lunch.  We even had leftovers for the next day!  Enjoy!
 
Beef Taco Bake
 
 
Ingredients:
 
 
Beef mixture:
1 pound of hamburger meat 80% lean
1 packet of taco seasoning
1 pinch of garlic salt
1 pinch of pepper
1/2 cup mild salsa (store bought)
1 cup salsa mix – see instructions and ingredients below
 
 
 
Fresh Salsa mix:
1 cup cherry tomatoes diced
1/2 chopped sweet onion
1 pinch garlic salt
1 pinch pepper
2 tablespoons lime
1 tablespoon lemon
 
 
 
Remaining Ingredients:
Shredded extra sharp cheese
Nachos
Sour cream
Shredded lettuce
 
 
 
Instructions:
Cook meat, drain, and add Taco seasoning; stir well
Add salt, pepper, store bought salsa and homemade salsa
Cook and stir until all of the meat is covered with seasonings and salsas
 
Layer a 9 x 13 inch baking dish (I used glass) with:
Nachos as your first layer
Add a layer of cheese, then meat, then nachos again
Keep layering until you get to the top with your last layer being cheese
Bake at 475 degrees for 15 to 20 minutes or until crispy on top
 
Top with your favorite ingredients.  I used sour cream, lettuce, and salsa but you can also add olives and more cheese
