Caprese Sandwich

Happy Wednesday everyone!!  I had originally planned a totally different post for today but decided to save it for next week.  I wanted to share this Caprese Sandwich with you instead.  It is incredibly easy to make and from what Thomas tells me, soooo delicious.  Our anniversary is this Saturday, my birthday is August 18th, and what did I say when Thomas asked me what I wanted?  I wanted to update our garage, paint, and add custom cabinets so that is what we have been working on!  I will post more on that later but in between cabinet making and staining, he got hungry for something salty and spicy.  I came up with this sandwich on a whim and it was a success!  I needed something fast, filling, and healthy and made my favorite salad for myself!  That I will save for another post and my cookbook coming out in the fall.  This sandwich is like a hamburger in that you can add and change whatever you like…stack it high with different meats or cheeses, skip the tomatoes, or salt and pepper it to death.  LOL!  Enjoy!

Ingredients

  • 3 slices Provolone Cheese
  • 3 slices Colby Jack Cheese
  • 1 Roma Tomato, sliced
  • 2 tbsp Jalapeno Peppers, sliced
  • 3 slices Prosciuiotto
  • 3 slices Genoa Salami
  • 3 slices Calabrese Salami
  • Salt and Pepper to taste

Notes

Although, I added measurements in this recipe, This sandwich requires no measuring.  You can build it to what you like.  It can also be cut into triangles, add toothpicks, and serve as an appetizer at a party making a very colorful tray!

      Thank you! The garage is coming along nicely! Cabinets are up and staining is almost complete. Will be painting the walls soon!
