Caprese Sandwich

Jul 22, 2020 | Food, Sandwiches

This is a re-post.  This Caprese Sandwich makes for a perfect lunch.  It’s light, healthy, and can be served with a side salad, a side of chips, and a sugar-free vanilla pudding cup :-).  Another option for this sandwich would be to place it between two slices of sourdough bread.  Butter each side of the bread, layer the sandwich, and toast on each side in a pan just like you would a grilled cheese!  Or just drizzle some balsamic vinaigrette or your favorite dressing over this sandwich and enjoy.

I’m finally able to say that I have added many items to our store, with more items to be added in the next few weeks.  Take a look and let me know what your thoughts are.  I’ve updated this post with more links and food recipes at the bottom.  I also now own www.2adorablelabs.com, which is exciting and shows the same format as the original website address!  I hope you enjoy this sandwich, and if you decide to try it, let me know by commenting below 🙂  I would love to hear what you think!
Happy Wednesday everyone!!  I had originally planned a totally different post for today but decided to save it for next week.  I wanted to share this Caprese Sandwich with you instead.  It is incredibly easy to make and from what Thomas tells me, soooo delicious.  Our anniversary is this Saturday, my birthday is August 18th, and what did I say when Thomas asked me what I wanted?  I wanted to update our garage, paint, and add custom cabinets so that is what we have been working on!  I will post more on that later but in between cabinet making and staining, he got hungry for something salty and spicy.  I came up with this sandwich on a whim and it was a success!  I needed something fast, filling, and healthy and made my favorite salad for myself!  That I will save for another post and my cookbook coming out in the fall.  This sandwich is like a hamburger in that you can add and change whatever you like…stack it high with different meats or cheeses, skip the tomatoes, or salt and pepper it to death.  LOL!  Enjoy!

We built and finished our garage with custom cabinets made by Mr. TAL.  I stained them mahogany, gave them a layer of poly, and we hung them up using a French Cleats system.  I painted the garage the same color as the outside of the house, which is called Pussywillow by Sherwin Williams.

Stay tuned for Friday’s “Friday Treats Friday” post, where I give you a delicious doggie treat and a video on Monday by my guest speaker, Thomas Domitrovich, on electrical safety for your pets!!!!!  I’ve listened to you guys and will include video content in my posts, some of which will include food recipes and occasionally electrical safety posts!

Let me know if you would like me to post more dog-treat recipes!  I don’t have the “Friday Treats Friday” anymore, but I don’t mind creating a dog recipe occasionally.
