How to make this dish crispy around the edges: (you could always use bacon grease instead of butter)
I sliced the hot sausages in half and cooked them in olive oil and hot pepper flakes until middle was done and edges were crispy in a cast iron skillet. I removed the sausage to the microwave just to keep warm. I then sliced the peppers and onions and sautéed them in the same cast iron skillet with pepper and garlic salt until they were soft with a slightly charred texture. The peppers were removed and butter was added to the pan to cook the egg. Make sure the butter bubbles when it hits the pan and turns to a golden brown.
Growing up, my dad made the best eggs! He would cook them in bacon grease and the edges would get so crispy that I still mimic this today only with butter. I cooked the egg on both sides until the outer edges were crispy and the yolk was jiggly in the middle. Then it was time to layer the sausage, peppers, cheese, and egg. I used extra sharp white cheddar but you can use whatever cheese you like.

Ingredients
- 2 hot sausage links
- 1/4 tsp hot pepper flakes
- 1 egg
- 1/2 cup extra sharp white cheddar cheese
- 1 tsp olive oil
- 2 Jalapeño peppers
- 2 Harbanero peppers
- 2 banana peppers
- 1 shallot, sliced
- 1 tbsp butter, salted
- pinch garlic salt
- pinch black pepper
Instructions
- Slice sausage and cook in a cast iron skillet with hot pepper flakes on both sides until middle is done and outer edges are crispy. Remove from skillet
- Cut up peppers and onions and sauté in same cast iron skillet with garlic salt and pepper until softened and slightly charred. Remove from skillet
- Add butter to skillet and cook egg on both sides until outer edges are crispy and middle is jiggly
- Layer on a dish your sausage, cheese, peppers, and egg
