Morning Glory Breakfast Muffins

Happy Wednesday everyone!!  Have you ever heard of Morning Glory Muffins?  I never did until I saw a recipe from A Family Feast and I knew I had to take a stab at making these muffins.  I’m so glad I did because they were amazing!  I ended up tweaking the recipe a bit and changed the name ever so slightly to Morning Glory Breakfast Muffins.  These were not Mr. TAL’s favorite but my sister and I loved them!  They are sister approved for sure!

I changed out the raisins for craisins and added more vegetable oil and vanilla.  I typically add more vanilla to every recipe and always take out my baked goods a few minutes before the cooking time is up.  This gave these muffins more of a goopy center so I left them in the cupcake tins while they cooled down creating the perfect, spongy, and decadent dessert.  Slather these morning glories with salted butter, pour yourself a cup of coffee and watch the sun rise for a relaxing start to your day.

I used extra large cupcake pans, ordered special cupcake holders from Amazon, and checked to make sure I had all the ingredients.  The recipe says that flaxseed is optional but I chose to include it in the recipe.  With a bag of Organic Simple Truth Whole Ground Flaxseed Meal, I was good to go.  This recipe calls for sugar and flour but honestly tastes so flavorful and healthy.

Morning Glory Breakfast Muffins

Sweet with sugar combined with healthy flaxseed, coconut, apple, walnuts, carrots, and cinnamon

Equipment

  • cupcake pans, cupcake holders

Ingredients

  • 2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups shredded carrots - or - (3-4 medium carrots, peeled before shredding)
  • 1/2 cup Craisins original recipe calls for raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup flaked coconut (sweetened or unsweetened) I used sweetened
  • 1/2 cup shredded apple (about 1 medium apple, cored and peeled before shredding)
  • 1/4 cup flaxseed (optional) I chose to add it
  • 3 eggs I used Vital Farms cage free organic
  • 1 1/4 cup vegetable oil original recipe calls for 1 cup
  • 3 tsp vanilla original recipe calls for 2 teaspoons

Instructions

  • Preheat oven to 350 degrees. Line 12 muffin cups with paper muffin liners (or grease a non-stick muffin pan)
  • In a large bowl, mix together the flour, sugar, baking soda, cinnamon and salt
  • Stir in the carrots, raisins or craisins, chopped walnuts, coconut, shredded apple and flaxseed. Mix until well blended. I used a large spoon to mix
  • In a seperate bowl, whisk together the eggs, oil and vanilla. Pour the egg mixture into the carrot/flour mixture and stir just until moistened
  • Scoop batter into prepared muffin cups. (Note: the muffin cups will be very full which is ok as these muffins rise only slightly during the baking process)
  • Bake for 20-25 minutes at 350 degrees
  • Take out and serve warm (but these are also amazing room temperature as well)

Notes

The muffins will be done when the centers are still slightly soft.  Insert a toothpick into the center.  If it comes out clean, that indicates the muffins are ready to be taken out of the oven.
I normally take mind out a few minutes before done when the center is slightly gooey which is my preference.  
If you like icing on your muffins, try mixing 1 cup of confectioner sugar, 1 8oz cream cheese, a splash of vanilla, and 1 tablespoon of International Delight Sweet Cream and mix well
