Chocolate Pumpkin Cookies

Happy Wednesday everyone!  Can you believe it’s almost Halloween! I thought these Chocolate Pumpkin Cookies would be perfect for this time of year.  The base is a chocolate cookie that has been given a boost of black gel food coloring which makes these cookies look jet black and goes perfectly with the colors of Halloween.  I sprinkled green sugary crystals and chocolate bits over them right out of the oven and added a Mellocreme Pumpkin on top for a pop of color and sugary sweetness.  There has been a debate recently on whether candy corn is delicious or disgusting.  Which one are you?  Do you love candy corn or would you rather see it taken off the shelves?
What Is A Mellocreme Pumpkin?
A mellowcreme pumpkin is candy corn in the shape of a pumpkin. That’s it! They are made with sugar, corn syrup, gelatin, sesame oil, honey, and artificial food colour. The appeal begins with the texture. They’re soft and dense like marzipan on the inside with a just-hard-enough outer shell. Then there’s the taste, which seems like pure honey despite honey being near the bottom of the ingredient list.
This recipe is adapted from Lord Byron’s Kitchen and can be made using regular sugar or a sweetener alternative such as Anthony’s Natural Erythritol Sweetener which is what I used.  I found mine on Amazon.  I also found the cocoa powder, black gel food coloring, and Mellocreme Pumpkins on Amazon as well.  Be careful with this food coloring as it is very dark and can stain your fingers.

These mugs are adorable and go perfectly with several of my fall dishes.  I found them at TJMaxx in Steubenville, OH and couldn’t pass them up.  

I pre-heated my oven to 350 degrees and began my journey to create the perfect cookie.  I combined the butter, sugar, and brown sugar together until creamy and smooth and then added the egg yolk, vanilla extract and black gel food coloring.  The recipe calls for vanilla extract but I used my bourbon vanilla that I made from Sweet Home Vanilla.
 
In a separate bowl I combined the flour, cocoa powder, baking soda, salt, and then added to my butter mixing on low until just mixed in.  This recipe will form into a sturdy dough ball and bake into a perfect cookie about the size of your palm.
I rolled the mixture into balls using 1 1/2  teaspoons of the dough for each cooling.  The original recipe calls for rolling the dough ball into sanding sugar before baking but I did not do that.  It also calls for laying down parchment paper on a cookie sheet but I just sprayed mine with PAM cooking spray, layer the dough balls approximately 2 inches apart and baked them for 10 minutes.  I’ve never claimed to be a professional cook or baker and recently learned that giving your cookie pan a light shake or slam on the countertop makes them bake more evenly.  If they aren’t done, just put them back in the oven for a few minutes mores.  This eliminates a crispy edge and a goopy middle on your cookie.
What Is Sanding Sugar?
Sanding sugar is a large crystal sugar that’s great for decorating because it won’t dissolve with heat. It also creates a sparkly effect because of the large size of the crystals that reflect light. It’s great for decorating treats like cookies, cakes, scones, muffins, and even candies.
The total time for prep and cooking is 30 minutes and this recipe makes 44 cookies.  It’s a great recipe for bringing to a gathering, adding to a gift, enjoying with your family, or incorporating into a tablescape!  I always love a dessert on the table and how great would these cookies look on my Pumpkins and Skulls table?

Chocolate Pumpkin Cookies

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 1/3 cup brown sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • sugar crystals
  • 44 Mellocreme pumpkins
  • 1/4 cup black gel food coloring

Instructions

  • Preheat oven to 350 degrees.
  • Sit butter out to soften. This makes for an easier mix.
  • Prepare a baking sheet by using parchment paper or spray PAM cooking spray on it. Let sit.
  • In a large mixing bowl, beat together the butter and both sugars until creamy and smooth. About 2-3 minutes.
  • Add the egg yolk, vanilla, extract, and black food coloring. Beat to incorporate.
  • Sift together the flour, cocoa powder, baking soda, and salt. Add to the butter mixture and beat on low speed until just mixed in.
  • Roll mixture into balls using 1 1/2 teaspoons of the dough for each cookie. Place on cookie sheet and leave 2 inches between each cookie.
  • Bake for 10 minutes. Remove from oven and sprinkle your sugar crystals and push a Mellocreme pumpkin in the middle.
  • Allow cookies to cool on a baking sheet for approximately 3 minutes and then move to a wire cooling rack.
