Apple Butter Cookies
How to make these perfect fall cookies:
Step 1: brown the butter
Have you ever made browned butter before? This was my first time and it was so easy. Bring 2 sticks of butter to a boil and stirr until you see the butter change to a deep golden color. The butter will start to bubble and foam up. This took approximately 5 minutes. I turned off the heat and let sit for a few minutes to cook more before transferring to a heat safe bowl while I pulled all the other ingredient together.
Little brown bits will form on the bottom of the pan. Those are the nutty little bits that will make your recipes extra delicious. Especially with the oats. I found the pairing to be really special. The smell of this browned butter is so delicious. I also think the nuttiness of the butter goes well with the maple syrup in this cookie!
Step 2: mix in the wet ingredients
When the butter has browned, the rest is simple. This is a very easy and fast cookie recipe. You can use a mixer, but a spatula will do the trick too. Mix the butter with brown sugar, apple butter, maple syrup, eggs, and vanilla. I used store bought apple butter but next time might try following a homemade recipe
Step 3: mix in the dry ingredients
Add flour, oats, cinnamon, nutmeg, and all-spice, to the bowl with all of the wet ingredients. Then mix, mix, mix, and fold in chocolate chunks, or a combination! You can use both chunks and chips if you like. ! I really wish I would have used walnuts in this recipe. They would have added so much texture and chunkiness to the cookie. I had grabbed a bag at the grocery store and then ended up putting them back!
Step 4: let the dough sit, then bake
Next, let the dough sit for 10 minutes. As dough sits, it will stiffen up and be easier to form into cookies.
Once the dough has chilled out, roll it into dough balls and bake away! I rolled mine into small/medium sized balls and this recipe made 21 cookies.
Step 5: cinnamon sugar
While the cookies bake, mix the sugar and cinnamon. Then when the cookies come out of the oven, you can sprinkle each with cinnamon-sugar to make these just like a cinnamon-sugar coated doughnut. You can baste each cookie with melted butter but I just sprinkled the cinnamon-sugar mixture on them as soon as they came out of the oven.
So heavenly. I’m telling you all, you will love every bite! So simple, and so delicious. It’s hard to beat a great fall flavored chocolate chip cookie – these are pretty special!
