Baked Brie And Cranberries In A Puff Pastry

This is a re-post with updated links and tips:  I’ve made this recipe several times now and with the holidays fast approaching, I wanted to post it again incase you missed it.  It’s a perfect recipe because it’s not only delicious but so easy to make!  
 
Happy Wednesday everyone!  On the blog today is my Baked Brie And Cranberries In A Puff Pastry.  This creamy cheese wheel is lathered in sour cranberries, rolled in a puff pastry sheet, and baked to perfection.  Topped with toasted, buttery, pecans and drizzled with honey, this appetizer turned out delicious.  It was definitely Mr. TAL approved.  This brie can be served by itself, with any type of cracker, bread, or change it up a bit and use potato chips or nachos.  Add a heaping spoonful of this baked brie, add a sliver of dark chocolate, and you’ve got a mouthwatering bite!
 
What is Brie?
 
Not sure what Brie actually is or looks like?  Brie is a soft cow’s-milk cheese named after Brie, the French region from which it originated. It is pale in color with a slight grayish tinge under a rind of white mould. The rind is typically eaten, with its flavor depending largely upon the ingredients used and its manufacturing environment.

My first attempt at baking brie was for my “Friendsgiving” party and I kept it simple with baking the brie and just adding honey and walnuts to the top of the wheel.  Today, I’m giving you a much better recipe but with a few more steps. Although this recipe has more steps, it is still easy to make and well worth it.  Your guests will love it and it is perfect for the holidays plus it looks great on a table and adds to the festive decor of Christmas.

Tip:  Make sure you put your puff pastry out to thaw first.  Working with a frozen pastry will not give you the results you are looking for.  It will be harder to work with and will not cook properly.
 
I found this recipe on Half Baked Harvest but changed it up a good bit.  The first thing I must stress is to make sure you take your puff pastry out to thaw.  This is a step I forgot and had to nuke it a minute to thaw.  
 
Tip:  Use parchment paper
 
The next thing to consider is that the cranberry sauce will run over the sides of the brie, through the pastry, and out onto your sheet pan.  I would recommend laying a sheet of parchment paper down first to bake your brie on.  This also helps to transfer your brie to another decorative dish out of the oven if needed.

While the pastry is thawing, make your cranberry sauce by adding cranberries, orange juice (pulp free), vanilla, real maple syrup, cinnamon, and sea salt to a pan and cooking on medium to low heat until cranberries are popping in the pan.  You can literally hear them pop!

Remove the brie from its packaging but you don’t have to take the rind off.  I elected to keep it but did scrape the top off to allow the cranberry sauce to marinate the cheese while cooking.  Once the cranberries are done, lay a sheet of puff pastry on a piece of parchment paper and then on to your baking pan.  Place your brie cheese wheel in the middle and top with your cranberries.  Pull up each side of the puff pastry over the cheese and seal with egg.

While your brie is baking, toast the pecans in a pan under medium to low heat.  Add 1 cup of pecans whole if you prefer them that way, sprinkle with cinnamon, salted butter, sugar, and honey.  Be careful not to let the pecans stick to the bottom of the pan.  If so, add a bit more honey and turn the heat off.  These pecans only take a minute or two to toast.  I used a regular pan instead of my cast iron skillets.

Baked Brie With Cranberry In A Puff Pastry

Ingredients

Cranberry Sauce

  • 2 cups cranberries
  • 1/4 cup real maple syrup
  • 1/2 cup orange juice, pulp free
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch sea salt

Brie

  • 1 8 oz wheel of brie cheese
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Topping

  • 1 cup pecans
  • 1/2 tsp cinnamon
  • 1/2 tsp sugar
  • 1 tbsp butter, salted
  • 1/4 cup honey

Instructions

Cranberry Sauce

  • Over low to medium heat, cook cranberries, orange juice, maple syrup, vanilla, cinnamon, sea salt until cranberries are bursting. Keep stirring so they do not stick. Turn off heat and prepare the brie.

Brie

  • Thaw 1 sheet of puff pastry
  • Cut top off brie and lay in the middle of the puff pastry sheet top up
  • Layer brie with cranberry sauce
  • Fold puff pastry over brie
  • Beat 1 egg and baste top of pastry
  • Bake at 425 degrees for 20-25 minutes

Notes

I chose to use whole pecans but you can also chop them into small pieces.  You can also use as much or as little as you want
When the brie was baked, I topped it with my pecan mixture and then poured more honey over the top and let it drizzle down the sides
If you want your cranberry sauce to taste a little sweeter, add more sugar or wait until it is baked and add sugar to the top
Wanting to serve it with bread, try toasting slices of French bread
Decorate with orange slices, sugared cranberries (clean the cranberries and while still wet, roll in sugar) for topping
