Happy Memorial Day everyone!  We hope you all have an amazing day planned.  I’m sending out a quick recipe just incase you are wondering what to make for dessert.  These Monster Bars are absolutely decadent with a crunchy top and a gooey inside packed full of peanut butter (no sugar added) and Nestle’s milk chocolate morsels.  I added oats and flaxseed for texture and baked them at 350 degrees for 30 minutes.  I was looking to make a dessert for Mr. TAL that was delicious but on the healthy side and this did not disappoint.  I first found it on ButternutBakery.com but changed it up a bit.

The recipe called for 1 cup of oats but I chose to do a little less than a cup and then added 1/4 cup of flaxseed.  I didn’t add the flaxseed into the recipe card below just incase you do not like flaxseed.  It also called for M & M’s and I used M & M’s cookie filled which were totally delicious in this recipe.  You can use honey or pure Maple syrup and I used Log Cabin Pure Maple Syrup, eggs from Vital Farms (these are the best eggs), vanilla from Sweet Home Vanilla, and extra virgin cold pressed coconut oil.  If you want to make the recipe dairy free, swap dairy free chocolate and dairy free candies!
 
This recipe called for 3/4 tsp salt but I used 1/4 teaspoon.  It also called for semisweet chocolate morsels but I chose to use milk chocolate.

All you have to do is fold all the ingredients together with a rubber spatula, layer an 8 x 8 pan with parchment paper, spread out your dessert and bake at 350 degrees for 30 minutes.  These bars are done when the outside gets light brown and the center is evenly puffed.  You should probably wait and let these monster bars cool before cutting but I couldn’t wait.  They did fall apart a bit but that’s ok with me.  Letting them cool will help them stay formed when cutting.

A monster cookie bar made with peanut butter, M & Ms, and loaded with milk chocolate morsels topped with sea salt!

Ingredients

  • 1/2 cup peanut butter like Jiffy or Skippy I used sugar free
  • 1/4 cup coconut oil, melted
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tbsp maple syrup
  • 1 large egg
  • 2 tsp vanilla
  • 3/4 cup plus 2 tbsp all purpose flour
  • 1 cup old fashioned rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 cup milk chocolate chips
  • 1/2 tsp salt
  • 3/4 cup M & M's

Instructions

  • Preheat oven to 350 degrees
  • Line 8 x 8 baking sheet with parchment paper. Allow paper to hang over sides for easy removal
  • In a large bowl, whisk together the peanut butter, coconut oil, brown sugar, sugar, maple syrup, egg, and vanilla
  • Add in the flour, oats, baking soda, cinnamon, and salt. Use rubber spatula to combine
  • Add chocolate chips and M & Ms
  • Press dough into pan and layer with more chocolate if you like
  • Bake for 30 minutes or until edges are golden brown and center is evenly puffed
  • Sprinkle with sea salt

    These Monster Bars are awesome, what a fun summer treat! I love the added flaxseed option, smart way to incorporate some extra protein and fiber.
