Mini Pup Pumpkin Pies
Mini Pup Pumpkin Pies
Ingredients
- 3 cups Oats
- 2 Free range eggs
- 29 oz Pumpkin Puree
- 1 tsp Vanilla extract
- 1 tsp water
- 1 tbsp Coconut Oil
- cinnamon, sprinkle
- Low fat yogurt
Instructions
- Preheat oven to 350 degrees
- Mix oats, egg, water, and 1/2 tsp vanilla together. Let sit
- Mix Pumpkin Puree and 1/2 tsp vanilla together
- Wipe mini cupcake pan with coconut oil
- Press oat mixture into mini cups half way up the side and fill with pumpkin mixture
- Bake for 30 minutes
- Sprinkle with cinnamon. Let cool and top with yogurt
