A Sweet Spin On A Classic BLT

Happy Wednesday, everyone!  I cooked Mr. TAL a delicious meal this past weekend, putting A Sweet Spin On A Classic BLT, which made the cut for TAL’s blog!  He said it was blog-worthy, so I had to share it with you!  If you’ve been reading my blog for a while and have tried some of my recipes, you’ll know that I love combining sweet and salty flavors.  This sandwich is just that.  So what is my secret ingredient?  It’s Fig Preserves by Bonnie Maman :-). I had thick-cut bacon left over from breakfast, as well as marinated mozzarella cheese balls, romaine lettuce, cherry tomatoes, Hellman’s mayonnaise, parsley, and oregano from my garden. Still, I wanted to put a twist on a classic BLT.

It’s probably easier to use sliced mozzarella cheese and sliced tomatoes, but that’s all I had and didn’t feel like running to the store.  I marinated the cheese balls in olive oil and fresh-cut herbs (from a previous recipe, in case you’d like to fry them), added a pinch of garlic salt and pepper, and let them sit while I cooked the bacon.  I usually use Italian bread, but I used sliced sourdough bread by Izzio’s instead, which added texture and flavor.  You can also find Izzio’s bread at Kroger.

While the bacon was cooking, I sliced cherry tomatoes and sautéed them in a pan with a bit of the olive oil from the mozzarella cheese.  I added the fig preserves and let my little concoction marinate over medium heat for a few minutes.  Once the tomatoes were tender, I added the cheese balls and turned off the heat.  This way, they did not melt but were soft and warm.  I buttered both sides of the bread with KerryGold salted butter and toasted them in a pan until the edges were crispy and the slices were crunchy.  Then it was time to assemble my BLT.

I laid out two pieces of the sourdough toasted bread, spread a layer of mayonnaise on each slice, added a piece of lettuce to each slice, layered on the bacon, followed by the tomato and mozzarella balls on each slice, then crunched the two sides together.  I put approximately 3-4 slices of bacon on each side (some were broken pieces).  The sandwich was so fat that I couldn’t put a toothpick in it, but Mr. TAL didn’t mind :-).

And there you have it, my sweet, salty, herby spin on a classic BLT.  I made the dogs dinner with their dog food, boiled white rice, and boiled hamburger meat, and we all enjoyed an evening on the porch.  We spent most of the day working in the yard, so it was nice to relax and enjoy the beautiful weather.  If you make this sandwich, let me know what you think!

This recipe yields two large sandwiches, but you can cut them in half if desired.  Or spread out the number of slices of bacon and bread to make more miniature sandwiches.  Possibly cutting them into finger sandwiches as well.

Sweet, Salty, Herby, Cheesy Spin On A Classic BLT

Ingredients

  • 1 pound thick bacon
  • 1/2 cup cherry tomatoes, sliced
  • 8 Mozzarella cheeseballs cut into half
  • 2 tbsps olive oil
  • 1/4 tsp fresh parsley, chopped
  • 1/4 tsp oregano, chopped
  • 1 tbsp fig preserve
  • 4 slices of sourdough bread
  • salted butter to spread
  • Mayo to spread
  • pinch of garlic salt and pepper
  • lettuce

Instructions

  • Cook bacon and set to the side
  • Slice the mozzarella and marinate with olive oil and herbs
  • Slice tomatoes, add fig preserve, a little bit of the olive oil from the cheese, garlic salt and pepper. Saute until tender on medium heat
  • Add cheese and turn off heat
  • Spread butter on bread and toast in a pan on both sides
  • Remove the bread from the heat and layer it with mayonnaise, lettuce, bacon, tomatoes, and cheese. Serve warm.

I steam-cleaned the floors last weekend and put down new rugs from Walmart so they don’t slide on the hardwood floors.  Jake and Maggie always know when something new comes into the house, and sure enough, they had to lie on them before I could even get the tags off :-).  I buy what I can find to match because I need different sizes, they won’t show much hair, and they are easy to wash.  They might not match my house, but that’s ok because it keeps the pups safe.
