Chocolate Carrot Walnut Spice Cake

Oct 6, 2021 | Food, Sweets

Happy Wednesday everyone!!!  With fall weather comes the pumpkin, spice, and anything nice desserts and I’ve been loving all the recipes I’ve been finding on Southern Homes magazine, Martha Stewart Living magazine, and Pinterest.  I love baking a cake from scratch but chose to put my own creative spin on a box cake!  This Chocolate, Carrot, Walnut, Spice cake is definitely a keeper for your recipe box!  With each bite you can taste the cocoa powder, then comes the spice, the carrots are light on flavor but give it color and most definitely the walnuts add an extra depth to this cake.  The icing is a decadent blend of white chocolate, confectioner sugar, vanilla, cream cheese, and two tablespoons of my secret ingredient.

Box cake sometimes get a bad reputation but they are great!  Not only are they fast and delicious, you can add extra spices, nuts, sprinkles, cocoa powder, chocolate, sour cream, or coconut oil to replace the oil just to name a few creative ways to enhance your dessert.  Add a wonderful homemade icing, decorate with fruit, extra chocolate and you have a dessert that everyone will enjoy!  In my opinion, I could have added more cocoa and a dash of nutmeg and cinnamon!!!  I will do that next time :-).  Another way to make your cakes and cupcakes stand out is to use edible flowers or sugared fruit!

I love creating a cake from scratch but we have busy lives!  This is a great recipe for a quick dessert with loads of flavor!  I chose to use my cupcake holders from Amazon and fill up 12 large cups creating these fun and pretty cupcakes.  I had some leftover chocolate sprinkles, crystals, and white chocolate chips to sprinkle on top which highlights and compliments the flavor of the cupcakes.

If you are like me, I like biting into icing that has slivers of solid chocolate which is how I created this recipe.  The white chocolate morsels are melted down until almost blended and taken out and stirred with a spoon. This allows the chunks or pieces that weren’t all the way melted to remain.

Want a double layered cake?  You can do this one of two ways which is to bake two separate cakes and layering icing in the middle and stacking one on the other or baking one round cake and slicing that down the middle.  Layer the bottom with icing and stack the piece on top.  Sit on a beautiful dish, ice, and decorate to your liking.

This cake is incredibly easy to make.  Make the cake according to the instructions on the box, add cocoa and walnuts and bake.  While cake is baking, make the icing.  My secret ingredient I used in the icing is International Delight Sweet Creamer.  This enhanced the sweet taste of the icing, gave it a smoother texture, and also made the icing creamier.  The vanilla will give your icing a brownish color but once you add the creamer and white chocolate, the icing will lighten up to a beautiful cream almost white shade.
