Pepper Salami Cheese Bites

Happy Wednesday everyone!  Sometimes we follow the Keto Diet in our house and these Pepper Salami Cheese Bites are perfect for those on this diet.  I scrambled through the refrigerator and cabinets after Mr. TAL declared last week Keto week and came up with this recipe.  I’m not a huge fan of salami but I have to say this recipe is Mrs. TAL (that’s me) approved :-). The salami turned out crispy around the edges and the combination of this ooey gooey cheesy mixture and al dente soft peppers was perfect.  Never mind the extra crisp layer of cheese on top! Yum!

This is a super easy recipe that takes minimal prep, ingredients, and cooking time.  I made enough for leftovers for lunch the next day and breakfast the following morning.  I cut and cored red and green bell peppers into chunks, layered a mixture of cream cheese, seasonings, and extra sharp cheddar, salami, more cheese, and baked in the oven for 30 minutes.

To get the bottom of the peppers crispier, I removed from the oven and cooked in a cast iron skillet in a tablespoon of olive oil for 10 minutes. I prefer a more charred bottom on my peppers but if you do not like that, omit this step.  Or you could keep these “bites” in the oven a bit longer.

Pepper Salami Cheese Bites

Ingredients

  • 2 red bell peppers cleaned, cored, cut
  • 2 green bell peppers cleaned, cored, cut
  • 2 8 oz packages cream cheese softened
  • 2 cups shredded extra sharp cheddar cheese save some for sprinkling on top of peppers
  • 1/2 tsp Himalayan pink salt
  • 1/2 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • Italian Dry Salami (pre sliced) as many as you need

Instructions

  • Clean, core, cut peppers into squares
  • Mix cream cheese, salt, peppers, garlic powder, cheese together in a bowl
  • With a knife, smear cream cheese mixture on peppers to the preferred thickness
  • Top with Italian Dry Salami (pre sliced)
  • Add more cheese on top if you like
  • Bake at 400 degrees for 30 minutes
  • Take out, add olive oil to cast iron skillet, and cook on stove top for 10 minutes

Notes

These peppers can be topped with anything you like from salami, olives, more bell peppers, peperoncini, tomatoes, etc.  
Using these as an appetizer, use fun festive toothpicks that match your tablescape!  Set out some matching themed plates and napkins for your party guests to enjoy these bites.

    I love that they are bite sized finger foods! Holiday parties are coming and what a nice appetizer to bring…I think these would be good room temperature also????
