Pudding Cake Cup

This is a re-post from last year. Not only did I accomplish all on my bucket list (except the travel), I made this delicious and very easy dessert (see recipe card below). I took shortcuts in making a box cake and layered pieces of cake with this delicious homemade pudding! This would be great for St. Patrick’s Day and a fun addition to any tablescape.

Happy New Year and Monday everyone! Happy 2021! How are you feeling? Do you feel renewed, regenerated, refreshed, glad 2020 is over? In all honesty, 2020 was a setback for many but TAL accomplished so much last year that I feel grateful for all that I have been blessed with. I sat down at the beginning of December, looked over my bucket list from 2020, and wrote out my bucket list for 2021 (like I do every year) and was amazed at how much I got done (HERE), (HERE), and (HERE). I had always envied the women who achieved their dreams and was also proud of their accomplishments and now I can say I am one of them. So, when you get down on yourself, know that when you put your MIND to whatever it is you want to do, you CAN and WILL achieve your DREAM(S). If last year has taught you anything, life is short, don’t take it for granted, go after what you want and make it yours!

Of course, you know me, and I would’t be working on one of my “lists” without something sweet sitting near by to munch on :-). What do you do with a box of instant vanilla pudding and a box of French vanilla cake? You make a scrumptious dessert…you know…to help you think better 🙂

Make 1 box of instant vanilla pudding according to the instructions on the box and let sit
Bake cake according to the instruction on the box
Make a batch of icing using 1 8 oz cream cheese (room temp), 1 stick butter (room temp), 1 teaspoon vanilla, and 3 cups of confectioners sugar, 1 tablespoon whole milk and blend until creamy
Break up cake and layer pudding, cake, icing, green sprinkles until you reach the top of your glass an top with caramel

*See recipe and instructions below! Platter was a gift from my sister, glasses are from Home Goods this year, and spoons were a gift from my mother. I only made two desserts; one for me and one for Thomas but I had plenty left over for the next day.

Organize categories on TAL’s website better. In the process as we speak. More on this later. TAL’s site will get a mini facelift in this area.

Ingredients

1 box vanilla pudding, instant, large follow directions on box using milk
3 cups milk
1 box french vanilla cake mix follow directions on box using eggs, water, and oil
1/2 cup canola oil
1 cup cup water
3 eggs
8 oz cream cheese, softened
1 stick butter, softened
3 cups confectioners sugar
1 tbsp milk
1 tbsp vanilla
green sprinkles
caramel

Instructions

Make pudding, set aside to set
Make cake, set aside to cool
Make icing using cream cheese, butter, sugar, milk, and vanilla, cream together
Break up cake
Layer pudding, cake, icing, green sprinkles, and top with caramel in your favorite dish
