Twice Baked Potato

Happy Wednesday everyone!  Twice Baked Potatoes!!!!!  There is only one word for them…YUM!  I’ve been saving this recipe for a while now because I thought it was overdone and overused but decided it would make a great fall dish and wanted to share it with you.  It is simple to make and great for a large gathering or just for two.  If you are a potato lover like me, then this recipe is for you!

I always make more than what is needed because I love having them as leftovers.  Twice baked potatoes are great for a snack, as a side dish, with breakfast, or re-baked with peppers and onions.  I had tossed some red and green bell peppers, onions, and spices in a pan with a tablespoon of olive oil, sautéed them until soft and poured them over our baked potatoes as a new side dish to the steak on the grill I made for lunch.  I have also made scrambled eggs for breakfast, cut the cold twice baked potatoes into quarters and cooked them in a cast iron skillet until the skins got crispy and the potatoes were nice and warm.  Once the plate was made, I topped everything with shredded cheese and a new breakfast was born.  If you are interested in more of my twice baked potato recipes, please comment below.

All it takes is five pounds of potatoes, butter, sour cream, salt, pepper, bacon, scallions, and shredded extra sharp cheese.  If I’m making just a few potatoes, I put them in the microwave for a few minutes until soft enough to cut and scoop.  Because I was cooking for a bigger group, I boiled my potatoes until they were soft but not mushy.  Just stick a knife into the middle to test if they are ready to be taken off the burner.  You don’t want a potato that is too soft because it will fall apart and the skins of your potato will not hold the filling.

Slice the potatoes in half while still hot, scoop out the middle with a spoon and put into a bowl.  Set the skins to the side while you make your filling which consists of salted butter, a pinch of salt and pepper, sour cream and cheese.  All you need is a bowl, a spoon, and a mixer!  Mix until creamy and be careful not to have any lumps.  Once you are satisfied with how the potatoes look, prepare the skins by filling them with potato mixture, place them side by side on a cookie sheet or baking dish, top with cheese, scallions, and bacon and bake at 350 degrees for 10 minutes.  Turn on your broiler and broil the cheese until it starts to get slightly crispy and the scallions and bacon get melded into the cheese.  Serve with more sour cream if you like.  I personally like to add more scallions, bacon, and sour cream after they are out of the oven.  I always save some butter for when my potatoes come out of the oven.  Nothing better than extra creamy butter from Land O’ Lakes melting over all the cheese!

Equipment

Ingredients

  • 1 pound bacon
  • 1/2 cup sour cream
  • 5 pounds potatoes
  • 1 stick butter, salted or unsalted
  • 1 cup scallions, sliced
  • 2 cups extra sharp cheese, shredded
  • salt and pepper to taste

Instructions

  • Fry up your bacon while potatoes are boiling. When crispy cut into small pieces. Let sit while you make filling.
  • Boil potatoes until soft enough to cut and scoop out middle
  • Slice potatoes, scoop out middle, and transfer to a bowl
  • Put potato skins to the side
  • Mix potatoes, butter, sour cream, 1 cup cheese, and pinch of salt and pepper together
  • Scoop potatoe filling into potatoe skins and top with fried bacon, scallions, and 1 cup cheese
  • Bake at 350 degrees for 10 minutes. Broil until cheese starts to get slightly scrispy.
  • Top with more bacon, cheese, scallions, and sour cream if you like. Serve warm.
