Handmade Tater Tots

Happy Wednesday everyone!  I literally just made these Handmade Tater Tots for Mr. TAL and they were delicious.  I had a totally different post going out today which was a Bananas Foster recipe but I’ll save that for next week!  Shredded potatoes, cream cheese, extra sharp cheddar cheese, scallions, bread crumbs, garlic salt and pepper fried to a golden brown!  You simply can’t go wrong with this recipe.  These handmade tots are a cheesy and crispy combo that is perfect as an appetizer but we made it a meal (we will have dinner later).
 
I planned to make these smaller into tater tot size but got a bit aggressive with the shape!  Mine turned out to be meatball size instead but you get the idea :-).  The recipe is fun because it’s easy, quick, and you can play around with the different cheeses and shape.  You might also want to try making these into small patties as well.

We first tried these tots at Appalachian Brewing Company in Lititz, PA and loved them.  Made with shredded potatoes mixed with bacon, cheddar jack cheese and fresh scallions I had to try and re-create this recipe and put my own spin on them.  I chose not to use bacon but will definitely try it next time.  I did pick up some ranch dressing from Eat N Park because I can’t make homemade ranch dressing to save my life.  I have tried and failed miserably every time.

I used a 1 pound bag of shredded potatoes which I let sit out for a bit so they were easy to work with and not frozen solid.  In a large bowl I mixed the potatoes, cream cheese, extra sharp cheddar, scallions, crunchy plain bread crumbs from Private Selection, garlic salt and pepper and rolled out 14 medium balls.  In a large cast iron skillet, I added 2 cups of canola oil and fried the balls to a golden brown.  Note:  These do come out of the pan a bit greasy so make sure you have some Scott Towels on a plate to absorb the oil.  Serve with ranch dressing.  (see recipe below)

As for the bacon, you can use bacon bits but personally, I would fry up some bacon and cut into small pieces to add to the mixture before frying.  Top with more bacon and scallions before serving.  I took some over to my dad and he loved them.  Both my dad and Mr. TAL said they were blog worthy and approved :-). Handmade Tater Tots

A delicious combo of shredded potatoes, cream cheese, extra sharp cheddar cheese, bread crumbs and seasonings all rolled into a little ball and fried to a golden brown.

Equipment

  • 1 cast iron skillet You can also use a pot
  • 1 for or strainer for turning and removing from pan
  • 1 bowl for mixing

Ingredients

  • 1 pound bag of shredded potatoes, thawed I used frozen potatoes but you can shred your own if you like. Just make sure the water is drained from them
  • 8 oz cream cheese, regular, softened
  • 1 cup shredded extra sharp cheddar cheese I bought a block of cheese and shredded it myself
  • 1/2 cup plain bread crumbs I used Private Selection
  • garlic salt and pepper to taste
  • 1 bunch scallions, sliced I saved some for topping
  • 2 cups Canola oil You can use more if you like

Instructions

  • Let shredded potatoes thaw a bit
  • Add cream cheese, extra sharp cheddar cheese, bread crumbs, salt and pepper and mix well
  • Form into medium size balls
  • Fry in Canola oil until crispy
  • Drain and serve hot with ranch dressing. Top with more scallions, cheese, and ranch if you like
