Caprese Salad With Parmesan Dressing

This is a re-post:  I’ve made this several times and each time I add something different.  Although this Caprese Salad’s two main ingredients are sliced tomatoes and mozzarella cheese, why not add cherry tomatoes, marinated mozzarella balls, and slices of basil!  As Mr. TAL would say, you can never add to much cheese :-).  I also added a new links and a recipe card.
 
Happy Friday everyone!  To go along with my Prosciutto Pizza (HERE), I made this Caprese Salad With Parmesan Dressing to compliment our meal.  This dressing is a combination of cheesy and salty wrapped into one!  With a few simple ingredients shaped into a wreath design (because it’s Christmas) I made a healthy salad for two!
Another fun way to present this salad at the holidays is to shape it into a candy cane.  Add different cheeses, crackers, spinach leaves, and herbs!  Your guests will be delighted and think you spent all day working on it 🙂
 
Caprese Salad w Parmesan Dressing

I sliced 3 tomatoes on the vine, used half a pack of sliced mozzarella (broke into pieces), and a hand full of spinach leaves to create the ring.  At the top of the ring to close the circle, I added basil leaves, cheese, and grape tomatoes.

For the dressing, I mixed 4 heaping tablespoons of olive oil, 3 heaping tablespoons of grated parmesan cheese, pinch of garlic salt, and pinch of pepper and drizzled all over the salad.  I topped with a light dusting of parmesan cheese and served on a cheese board lined with parchment paper.

This is a fun salad to make for any occasion.  You can shape it however you want and with the holidays coming up, try a candy cane, wreath, Christmas Tree, angel, or round ornament!  Use an extra long toothpick with a fancy top and stack the cheese, tomatoes, and spinach leaves.  Add a small decorative bowl for the dressing to dip!

This would all be perfect on a round cutting board or cheese plate.  I simply used parchment paper but eventually bought an awesome board at Kirklands that can be used as a pattern on one side and a solid on the other side.  Lay out different crackers or breads in decorative bowls for your guests to enjoy.

Caprese Salad With Olive Oil Parmesan Dressing

Ingredients

Dressing

  • 4 tbsp olive oil I used Extra Virgin
  • 3 tbsp grated parmesan cheese
  • pinch garlic salt to taste
  • pinch pepper to taste

Salad

  • 1 package Grape vine tomatoes You can use any tomatoes you like
  • 1 log mozzarella cheese Sliced
  • 1 small container spinach leaves

Instructions

  • Use a decorative tray or board with parchment paper
  • Alternate the tomotoes, spinach, and cheese in a circle
  • Add spinach leaves at top for bow
  • Mix olive oil, parmesan cheese, garlic salt, pepper together and drizzle over salad
