Caprese Salad With Parmesan Dressing
I sliced 3 tomatoes on the vine, used half a pack of sliced mozzarella (broke into pieces), and a hand full of spinach leaves to create the ring. At the top of the ring to close the circle, I added basil leaves, cheese, and grape tomatoes.
For the dressing, I mixed 4 heaping tablespoons of olive oil, 3 heaping tablespoons of grated parmesan cheese, pinch of garlic salt, and pinch of pepper and drizzled all over the salad. I topped with a light dusting of parmesan cheese and served on a cheese board lined with parchment paper.
This is a fun salad to make for any occasion. You can shape it however you want and with the holidays coming up, try a candy cane, wreath, Christmas Tree, angel, or round ornament! Use an extra long toothpick with a fancy top and stack the cheese, tomatoes, and spinach leaves. Add a small decorative bowl for the dressing to dip!
This would all be perfect on a round cutting board or cheese plate. I simply used parchment paper but eventually bought an awesome board at Kirklands that can be used as a pattern on one side and a solid on the other side. Lay out different crackers or breads in decorative bowls for your guests to enjoy.

Ingredients
Dressing
- 4 tbsp olive oil I used Extra Virgin
- 3 tbsp grated parmesan cheese
- pinch garlic salt to taste
- pinch pepper to taste
Salad
- 1 package Grape vine tomatoes You can use any tomatoes you like
- 1 log mozzarella cheese Sliced
- 1 small container spinach leaves
Instructions
- Use a decorative tray or board with parchment paper
- Alternate the tomotoes, spinach, and cheese in a circle
- Add spinach leaves at top for bow
- Mix olive oil, parmesan cheese, garlic salt, pepper together and drizzle over salad
