Happy Monday everyone!  These Caramelized Apple Crisp Bars With Pecan Streusel And Cream Cheese Maple Glaze are so delicious!  Taken and adapted from Half Baked Harvest, I added both Honeycrisp and Granny Smith apples, Craisins, sweetened shredded coconut, and pure maple syrup to create a rich, tart, sweet treat for the holidays.

How to balance all sweet and tart flavors:
 
The combination of sweet and tart apples with butter, brown sugar, cinnamon, maple syrup, and vanilla will make your mouth water.  This is so fun on a holiday plate at the table, boxed up as a gift, or taken to a holiday party.  The oats, whole wheat flour, and shredded coconut give it texture and balance out all of the tart and sweet flavors.

This recipe is so easy to make.  First, I set my oven to 350 degrees and greased a 9 x 13 baking pan with PAM Butter Cooking spray.  In a large 13 inch cast iron skillet, I let the butter melt on low to medium heat until bubbling.  I used salted butter but you can use unsalted if you choose. While the butter was melting, I cut up 3 Honeycrisp apples and 3 Granny Smith apples into little squares and added them to the pan.  I added the brown sugar and cinnamon letting them cook down and folding over for approximately 10 minutes.

I took the apples off the heat and in a large bowl, I mixed the apples, brown sugar, oats, white whole wheat flour, remaining cinnamon, baking soda, pecans, Craisins, shredded coconut, maple syrup and vanilla mixing up until combined and moistened.  Then it was simply adding the mixture to my baking dish, spreading out evenly, topping with some shredded coconut (optional) and baking for 30 – 35 minutes.

While the apple crisp was baking, I made the glaze by combining my cream cheese, pure maple syrup, vanilla extract, confectioner sugar, and brown sugar together with my mixture.  Don’t forget to let the cream cheese come to room temperature.  I let the bars cool and cut them into 24 pieces.  You can always add the glaze out of the oven but I wanted the bars to be cooler and cut before adding my glaze.  This recipe makes 24 bars but you can always cut them smaller.

Ingredients

  • 2 sticks butter I used salted butter
  • 3 Honeycrisp apples
  • 3 Granny Smith apples
  • 1/3 cup light brown sugar + 2 tablespoons
  • 3 cups old fashioned oats
  • 1 cup Craisins
  • 1 1/4 cup whole wheat flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 3/4 cup pecans
  • 1/3 cup sweetened shredded coconut You can also use unsweetened
  • 1/2 cup pure maple syrup
  • 2 tsp vanilla extract
  • 8 oz cream cheese
  • 3 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp confectioner sugar
  • 2 tbsp brown sugar

Instructions

  • Pre-heat oven to 350 degrees.
  • Cup up apples into small squares.
  • Line 9 x 13 baking dish or sheet with parchment paper. You can also use butter to butter it. I used PAM cooking spray.
  • Heat up butter in a cast iron skillet until bubbling. Drop in apples, 2 tablespoons brown sugar, 1/2 tsp cinnamon. Toss until caramelized. Approximately 10 minutes.
  • Take off heat. In a large bowl, toss in remaining brown sugar, oats, whole wheat flour, remaining cinnamon, baking soda, pecans, Craisins, shredded coconut, maple syrup, and vanilla until combined and moistened.
  • Spread into baking dish and top with some shredded coconut.
  • Bake for 30-35 minutes.
  • Let cool and cut into squares.

Glaze

  • While apple crisp is baking, using a mixer, blend cream cheese (room temp), 3 tablespoons pure maple syrup, 1/2 teaspoon vanilla, 2 tbsp confectioner sugar, and 2 tbsp brown sugar
  • Drizzle over apple crisp squares to your liking
