Happy St. Patrick’s Day everyone!!!  I wanted to send this surprise Irish coffee recipe your way as a Thank you for your amazing support over the years.  We absolutely love all of you and we appreciate our readers so much.  We love getting your comments, ideas, and suggestions!  This is a perfect recipe to celebrate this holiday or really any day for that matter.  This strong brewed coffee loaded with Bailey’s Irish cream and sweat heavy whipping cream is a perfect after dinner coffee as an added bonus to your something sweet!

Jake And Maggie had fun this week trying on new Patty’s Day attire (as you can see below) during our “not so perfect” photo shoot.  Trying to get two dogs to focus when they get something new is incredibly hard but that’s ok.  This is what our photo fails look like :-).

I first found this recipe at Will Cook For Smiles and changed it up a bit.  You all know I love anything sweet so I added way more granulated sugar than what was called for.  Her “pinch” is my “tablespoons”!  But her “tablespoons” of brown sugar is my “pinch”.  I used Puppy Paws Coffee Company Chocolate Lab coffee but she says any coffee will do.  I chose to throw a pinch of brown sugar over my whipping cream because I like the taste of the sugary crystals on my tongue.  After the recipe was made, drank, and kitchen was cleaned up, I thought about how I could make this recipe even better.  Maybe next time I’ll throw some brown sugar, sugar, and butter into a small pan and stir until I get toffee crystals to sprinkle on top.

How to make Irish coffee:
I first made my whipping cream by combing the cream and sugar together until I got stiff peaks.  I used a whisk but you can also use a mixer.  Into the refrigerator that went and it was on to brewing my coffee.  If you are a coffee lover like me, check out Puppy Paws Coffee Company for all their delicious flavors all named after a different breed of dog!  Use code “2labs” at checkout for 10% off your order.  Every cup supports a pup!

Irish coffee

Hot brewed coffee, Bailey's Irish cream, and topped with a deliciously sweet heavy whipping cream and brown sugar

Ingredients

  • 2 cups coffee, brewed
  • 3 oz Irish cream
  • 2 pinches brown sugar Or add more if you like
  • 1/2 cup heavy whipping cream
  • 2 tbsp granulated sugar

Instructions

Whipped cream

  • Pour heavy whipping cream in a mixing bowl. Add granulated sugar.
  • Whip vigorously until soft peaks form.
  • Refrigerate while you make coffee.

Irish coffee

  • Brew your favorite coffee but make sure it is made very strong
  • Divide Bailey's Irish cream between the two mugs
  • Pour hot coffee and stir
  • Spoon whipped cream over top of each mug to your liking
  • Sprinkle brown sugar on top or add to your coffee and stir

Notes

Use a whisk to whip your heavy whipping cream or use a blender.  Make sure stiff peaks form.
You can omit the brown sugar all together if you like.
Drizzle salted caramel or chocolate syrup on top for added sweetness
The whipping cream and Irish cream will create a warm coffee.  If you like your coffee steaming hot, heat up the Bailey's in the microwave for 30 seconds before stirring in your coffee.  Add the whipping cream last.
