Whipped Egg Broccoli Spinach Treats

This is a re-post.  I made these for St. Patrick’s Day but I think they would be perfect for Easter!  These daisy shaped molds would look perfect as an Easter doggie treat!  While you are cooking breakfast, brunch, or dinner, you can whip these up to be served at the same time you are eating.  You and your pup can enjoy the holiday together 🙂
 
 
Happy early St. Patrick’s Day everyone!!  Who is making their pup something special to celebrate?  I made these treats for Jake and Maggie this weekend and they loved them!  I have cancelled all of their volunteer sessions with the nursing homes and libraries for now due to the Coronavirus and the pups were getting a little restless this weekend.  We made sure to practice all of their tricks and take them outside to run and play to keep them from getting cabin fever!  Since they were so good at all of their commands and staying in the yard respecting the boundaries and property lines, I promised them a delicious and healthy treat.  You can’t get any more healthy than pasture-raised eggs from Vital Farms, broccoli and spinach!!!
 
 
This 6 cup Daisy Silicone form was purchased at Walmart for $4.95 in their Easter decor isle.  They were designed to resist high temperatures for a short period of time.  Do not place on a direct flame or use where temperatures reach over 400 degrees.  Hand wash in warm, soapy water.  Rinse and towel dry.

Every 21 days they rotate their pasturers.  They call their chickens their “girls” and the girls enjoy exploring a fresh field of greens while their other pastures have the time they need to rejuvenate naturally, fertilized by what the their girls leave behind (which is super nourishing for native grasses!).
 
 
 
I have been buying Vital Farms for about a year now and love the taste, size, and color of the eggs!  Their boxes and “Vital Times” National Edition (which is the little newspaper you get inside) is printed on biodegradable paper stock with vegetable-based inks!!
 
 
 
 
Ingredients:
 
6 eggs
1 handful of spinach
2 – 3 sprouts of broccoli
 
 
 
Directions:
 
Whip eggs in a measuring cup for easy pouring
Roll spinach leaves into a roll in the shape of a cigar and chop into pieces
Cut up 2 – 3 sprouts of broccoli into little pieces
Add spinach to bottom of for the form
Add broccoli on top of spinach
Pour egg mixture over the spinach and broccoli
Cook at 400 degrees for 20 minutes (based on the molds I have chosen the allotted time might be different for you if you choose something smaller or bigger)
