Lemon Buttercream Icing
Happy Wednesday everyone!  I’ve been wanting to share this Lemon Buttercream Icing recipe with you for some time now.  Our godson turned 1 in April and although he had his birthday party, I wanted to do something for him at our house.  I had been craving some lemony sweetness and found this recipe on Homemade In The Kitchen.  I ordered a special birthday cake from Gus’s Goodies but thought these Lemon Buttercream Cupcakes with Lemon Buttercream Icing were a nice addition.  I chose turquoise and yellow as the birthday colors and decorated the cupcakes with yellow, green, and blue crystals to match the birthday plates I found on Amazon.
Rather than making the cake batter myself, I bought a box of lemon cake mix and made the buttercream icing homemade! Â I put a little twist on the icing recipe (as I always do) which you will see in the recipe card. Â
First Birthday Party Tablescape
I wanted a casual tablescape set for 5 that combined fun and color with a neutral mature look.  I combined wood chargers with greenery from Kirklands, added pastel bamboo plates from Amazon, and topped it off with paper plates from Amazon (for the cake and cupcakes of course).  The centerpiece was this gorgeous and delicious cake. Wine glasses (for the adults) were from the Dollar General and plastic cups from Walmart.  The silverware in gold with white handles were kid safe.  This table provided easy cleanup, a colorful birthday celebration, and just a touch of natural and adult 🙂
I added appetizers and the birthday gift to the table to give the table an extra punch of color. Â The cake stand was a last minute order on Amazon which I also used as a candle holder at one of my craft shows. Â A 4 oz tin candle fit nicely in each holder and I was able to fit 24 candles which gave the table height!

Spring Tablescape
Lemon Buttercream Icing
Ingredients
- 1 cup powdered sugar, sifted
- 1/2 cup unsalted butter, softened
- 1 tsp lemon zest
- pinch of salt
- 1 tbsp lemon juice
- 1/4 tsp vanilla extract
Instructions
- In a large mixing bowl, beat together the sugar, butter, lemon zest, and salt until smooth and creamy, about 1-2 minutes.
- Scrape bowl down with a rubber spatula. Add the lemon juice and vanilla. Beat for another 1-2 minutes or until light and fluffy.
- If the frosting is too thick, add some more lemon juice or milk. If the frosting is too thin, add a little more sugar.
- Decorate cake as desired or refrigerate in an airtight container for up to 2 days.
